Easy Chicken Dressing Recipe

Great for the Holidays or Any Day!

With the holidays fast approaching I wanted to share my easy chicken dressing recipe. I have been using this recipe for over 10 years and it is always a hit! I will include both my recipe for cornbread and the finished product-Chicken Dressing. I always use a cast iron skillet for my cornbread and a 9 x 13 metal pan for my chicken dressing. With that said here is the recipe for the cornbread.

Southern Cornbread Recipe Ingredients:

2 cups self rising buttermilk enriched cornmeal
1/4 cup self rising flour
1 1/4 to 1 1/2 cups buttermilk
1/4 cup all-vegetable shortening, melted( I always use Crisco)
1TBSP Canola Oil
1 large egg
1-2 tbsps. sugar (optional)

Pre-heat the oven to 425 degrees F. Coat your iron skillet (I use a 10″) with either shortening or oil and place in the oven to heat up. Combine all ingredients,except canola oil, this will be used at the end. Stir only until moistened ( do not over-stir) batter should be lumpy. Remove heated skillet from oven and pour batter into pan. Now drizzle the canola oil on the top and place in the oven. Bake for about 20-25 minutes, turn the oven on broil the last couple of minutes for a nicely browned cornbread. Always keep a check on it as ovens will vary and you don’t want to burn the cornbread. When done take out and dump onto plate and set aside for use in the chicken dressing recipe.

Easy Chicken Dressing Recipe

Ingredients:

1 Lg Hen
1 Lg Pan Cornbread
3-4 slices of bread
1 med onion
1-stick butter or margarine
2-tsp. salt
3 lg eggs
1/2 tsp sage
1 tsp black pepper
3-4 cups of chicken broth

Pre-heat oven to 350 degrees.Boil hen in large stock pot adding enough water to have a little about 7-8 cups of broth, cool, debone and pull meat and set aside. Measure out about 1/2 to 3/4 cup of chicken and 3-4 cups broth for giblet gravy. Chop onion and saute in butter. In large mixing bowl add eggs and beat slightly, crumble cornbread, add sage, salt, pepper, chicken, onion, and butter. Now add broth and mix well, the mixture should be very moist.(very important so your dressing is not too dry). Bake at 350 degrees for about 35-45 minutes or until golden brown.

Now I mentioned giblet gravy so I guess I better share that too! I mean what would dressing be without giblet gravy? I do have my own version which uses meat from my boiled hen instead of the traditional giblets. You can use either depending on your preference.

Giblet Gravy Ingredients:

3-4 cups chicken broth
1/4 cup flour
3 TBS butter
2 hard boiled eggs chopped
1/2 to 3/4 cup chopped chicken or giblets
salt and pepper to taste

Mix broth and flour in med sauce pan over med heat until smooth, stirring constantly. Stir in remaining ingredients stirring constantly until thickened.

There are a lot of steps to making the Chicken dressing recipe but it is really easy and so worth it! Your friends and family are surely going to love this favorite southern recipe.
